Ideas: – spicy braised meats (instant pot chicken tinga! – sauteed vegetables with cheese – sweet fillings like raisins or guava

First, decide what you'll use to fill your tamales!

Soak Corn Husks

Dried corn husks must soak in hot water until soft (at least 30 minutes) before wrapping tamales.

Prepare Masa Dough

Mix to form a soft, pliable dough: – 6 cups dry masa harina – 2 teaspoons baking powder – 2 teaspoons salt – 1 cup avocado oil, or fat of your choice – 3 cups broth

Assemble & Wrap

Spread an even layer of masa onto a corn husk and line up a spoonful of filling in the center. Use the husk to wrap the dough around the filling, then fold the husk around the tamale.

Pressure Cook!

Arrange the tamales vertically in Instant Pot over a cup of water. Use the STEAM function to cook on high pressure for 25 MINUTES.
